After brewing many styles of beers with exotic and unusual ingredients, I wanted to brew a more traditional beer style, says Ronald. I took the challenge to brew a German-style Weissen, but wanted to give it a Flying Dutchman feeling.


The idea was to add some more fruity tones to the flavor of this beer. Amarillo & Mosaic hops were the solution after doing several hop tests. The flavor of those two hops plays very well together with the banana flavor from the Bavarian yeast.


The bitterness of our Weissen is also slightly higher, explains Ronald. I like

to have a decent bitterness in this beer to balance the sweetness of the malty body.
